With the nice weather finally arriving, it’s always nice to be able to grab a quick meal to take out for a picnic at the lake, park or along the riverside.

The Town Butcher has an amazing deli selection and we’ve been able to check out firsthand over a few different shoots all the work they put into it. From their twice baked potatoes, to their Maui ribs, to their various salads - broccoli, Greek, potato, pasta and more. There are some amazing options for you to pick up and go.

That might sound like that’s all we have to say about it, but it’s not. We’ve spent a couple hours over a few different days watching how the staff at the Town Butcher puts together their grab and go deli items. In a word it’s meticulous. They use the freshest products, the best spices with no-additives, they use the best meat and cheeses and they don’t use anything that’s pre-packaged or out of a tub like you’d find at various grocery stores.

Cold brew and wings on a Wednesday is a great way to get through the middle of the week.

When it comes to wings though there are a lot of options: flat or drum? wet or dry? salty, sweet or spicy? oven baked or deep fried? sauce or no sauce? So many options!

For us, the best in wings in town are at Major League 2 Taphouse and Sports Pub and you’ll find their wings on special every Wednesday! You can choose from Honey Garlic, Teriyaki, Sweet Thai, Honey Mustard, Cajun, Dry Garlic, Salt & Pepper, Dill Pickle, Hot, Greek, BBQ and be sure to try Triple Crown - it’s Hot, BBQ and Teriyaki blended together!

Side note, thanks to the staff at ML2 we were privy to trying one of their favourite off menu wing flavours: Hot & Dill Pickle. It might sound a bit off putting to something like that together but it’s intense and worth trying at least once!

A few of our favourite wing pleasures would have to be salt & pepper wings with hot sauce on the side, you get a bit of everything then; OR, the classic hot wings and blue cheese (for those crazy people that don’t like blue cheese, you can get the ever so popular ranch). Pair that up with one of the many craft beers that’s on tap at ML2 and you’ll be eating pretty!

Open seven days a week from 12pm-6pm, Kent’s Ice Cream Co. is a great spot to hit up for some amazing ice cream and waffle cones. The smell of fresh baked waffle cones hits you right when you walk through the front doors and the selection of ice cream will leave you wanting to come back and try the next great flavour.

Located at 47582 Yale Road (hop on Yale Road and head east, you’ll see Kent’s next to Little Mountain Greenhouses at the foot of Little Mountain) and has ample parking and space on their front patio and picnic tables in their front lawn.

The service has always been amazing when we’ve stopped in and we’ve thoroughly enjoyed getting our Bubble Gum and Moose Track flavoured ice cream in a waffle cone but our last visit we discovered a small pint of ice cream in the freezer that we took home with us. The Mint Brownie ice cream is to die for. Absolute heaven. Highly recommend it!

Kent’s Ice Cream Co. now offers Take Home Pints of ice cream. They are currently only offering a few flavours and in limited, small batches which keeps the ice cream fresh and tasty!

Available for $10 each and with limited quantities available. We highly recommend trying their Mint Brownie pints. Delicious!!!

So pick up the kids after school and head over Kent’s Ice Cream Co. or you can simple head there yourself to enjoy a nice little treat for yourself. You’ll be happy you did.

Finding the perfect spot to have brunch on the weekend in Chilliwack can sometimes be a little tricky. Finding the perfect spot PLUS discovering fresh, wholesome, amazing ingredients with fantastic drinks makes your weekend complete.

We’ve loved Hugo’s for a long time. A very long time.

Since they started offering a brunch menu just over a year ago, we’ve been meaning to check it out because well, Hugo’s… and brunch… How could we resist not hanging out on the patio and enjoying some Mexican dishes and drinks while basking in the sunshine?!

The brunch menu is small but well chosen by the kitchen to provide you with the best Mexican breakfast dishes for you to enjoy. We highly recommend the Huevos Rancheros and pair it with a spicy Caesar! The Guava Mojito also goes down very smoothly and will leave you wanting at least one more.

The patio space at Hugo’s is somewhat limited so maybe call ahead about finding the best time for brunch or get there for 11am when they open on Saturday and Sunday, the two days they offer brunch.

One of the newest craft breweries in Chilliwack (yes we have multiple now!) is Bricklayer Brewing, located right at Five Corners. It’s located in one of the old buildings downtown that’s been restored and if you look at the ceiling inside you’ll see a piece of Chilliwack history - the shiplap ceiling is made up of wood that’s been saved and restored from other buildings in the downtown.

Craft beer and specialty pizza out on the farm? Yes please!

We recently visited Farmhouse Brewing, located on South Sumas Road (just off the intersection with Lickman Road) you can see the map below.

Being on ALR land, this brewery is extra special because not only do they grow some of the products they use in their beer and food, but they also use other agricultural products from other farms in BC as well. It’s a unique and amazing set-up.

We ordered their Speck & Ricotta pizza that has Tomato Sauce, Speck, Arugula, Whipped Ricotta, Herb Oil, Grana Padano and for the kids we ordered the Pepperoni pizza. The pizza is extra special as it’s cooked in their wood fired oven. The pizza crust was light and toppings were so well paired together. Completely delicious! Add in some craft beer or cider and you have such a winning combination.

Despite our current times, Farmhouse has done a great job of making lots of space both inside and outside on their covered patio, they even have an outdoor fire table to keep you warm. When the warmer weather comes again you can sit out on the lawn on their picnic tables and around the fire pit. It’s such a great a spot to meet up with your small group of people and enjoy locally grown products in a quiet, rural setting. We’re sure you’ll absolutely enjoy it!

Chilliwack Kabob is a pleasant surprise of a Syrian restaurant, tucked away off the side of Yale Road near the train overpass (map below).

As with many of our local restaurants, Chilliwack Kabob is doing a fantastic job of following the rules for dining during this Covid pandemic, offering both dine-in and dine-out options for you to enjoy their middle eastern cuisine. From coffee to falafels, from shawarma to of course kababs, you’ll thoroughly enjoy the aromatic flavours and large quantity meals.

On our recent visit, we had the “Kabab Fill Up” which could easily be shared with two people. Our favourites were the humus and kababs, which were absolutely delicious!

Once the sponsorship went through they flew to Montreal, and then squeezed into a Vancouver hotel awaiting a rental opening in Chilliwack.

Despite some folks thinking he was a little crazy to risk opening a restaurant, Wael persisted with passion and drive until he was able to make it happen.”

Located on the outskirts of Chilliwack (52845 Yale Rd - map below) just off the Bridal Falls/Yarrow Exit of Highway, Wildcat Grill is a great place to start or finish a day enjoying the great outdoors of Chilliwack.

The patio is big, spacious and sits at the foot of the Mt. Cheam mountain range. On clear days you’ll look up and see hang gliders and paragliders coming down off the world famous launching pad above Bridal Falls. Pair the gorgeous outdoor views with a cold local brew, some tasty appetizers and some Baja Fish Tacos (pic below) and you’ll be all set!

One of the menu items that the Wildcat has become known for is their ‘Rosedale Rowdy’ Burger. This is a 3 patty burger on a loaf of French bread with cheese, bacon and all the fixings! Don’t forget about the delicious fries that comes with it too. Share it with the table or bring your friends and impress (or disgust) them by showing them just how big your appetite really is.

The Wildcat Grill also offers specials on the weekends with their Prime Rib dinners and their famous All You Can Eat Spaghetti on Tuesday’s.

Be sure to take the long drive through Chilliwack along Yale Road and enjoy our beautiful countryside and then pull into the Wildcat Grill right before you hit the round-about intersection that leads to Bridal Falls, Popkum and Agassiz.

Sweet & Soy Pork Tenderloin

Sweet & Soy Pork Tenderloin

Ingredients

Instructions

  1. In an airtight container or sealable plastic bag, combine Saskatoon or Blueberry jam or jelly, lemon juice, ginger, garlic, oil and soy sauce. Set aside ½ cup (125 mL) of the sauce for serving. Add pork tenderloins to the container and marinate 2 to 24 hours in the refrigerator.

  2. Pre-heat oven to 400°F (200°C). Discard marinade and place tenderloins on a foil-lined baking sheet. Bake for 25-30 minutes or until internal temperature reaches 145°F. Remove from oven; tent loosely with foil (internal temperature will rise to 150°F).

  3. Heat reserved sauce in a small saucepan and serve drizzled over slice pork tenderloin. Serve with roasted potatoes and seasonal vegetables and/or salad.

Pork and Peppers Stir Fry

Ingredients

Instructions

  1. Combine pork, sugar, 2 tablespoon soy sauce, ginger and garlic. Mix well and let stand 15 mins.

  2. Heat 12-inch skillet and add 1 tablespoon oil. Add pork mixture and stir-fry approximately 3 minutes. Remove from skillet. Add remaining oil and stir-fry peppers and onions for 3 minutes or until crisp-tender.

  3. In a small bowl combine pineapple liquid, cornstarch, brown sugar, and 1 teaspoon soy sauce. Cook until sauce has thickened and pineapple is thoroughly heated, stirring constantly.

  4. Serve over hot rice or oriental noodles.

Savoury Boston Ham Glaze

Savoury Boston Ham Glaze

Servings: 6-10 people

Ingredients

Instructions

  1. Preheat oven to 325° F (160°C).

  2. Combine ingredients and mix well.

  3. Fully-cooked hams just need to be heated through before serving.

  4. Place a ready-to-serve or fully-cooked ham in a shallow roasting pan and bake, uncovered, at 325° F (160°C). A fully-cooked whole ham will take about 15 to 18 minutes per pound (500 g); while a smaller fully-cooked half-ham will need about 18 to 24 minutes per pound (500 g). Brush on glaze during the last 15-30 minutes of cooking.

  5. Alternatively, you can cook the ham in a crock pot with all the glaze ingredients and heat 2-6 hours until heated thoroughly.

  6. Allow the juices to settle by letting the ham rest for 10-15 minutes before carving.

  7. Enjoy!

Perfect Pulled Pork

Using a slow cooker is not-so-secret weeknight weapon - it requires minimal hand-on time so you can spend less time in the kitchen and more time with your family (Courtesy of National Pork Board)

Servings: 16-20

Prep Time: 10 minutes

Cook Time: 6 hours

Ingredients

Instructions

  1. Combine all the seasonings in a small bowl and rub evenly over roast. Place meat in a 6-quart slow cook. Add water. Cover and cook on LOW for 6-8 hours or HIGH for 4-5 hours or until pork is very tender.

  2. Remove pork to a large cutting board or platter and let rest for 10- 15 minutes. Pull, slice or chop to serve.

  3. Serve in buns with barbeque sauce.

Potato and Farmer Sausage Soup

Potato and Farmer Sausage Soup

Ingredients

Instructions

  1. Put potatoes and onion into a soup pot and cover with water. Add salt, cover and bring to a boil. Reduce heat and simmer until potatoes are cooked.

  2. Cook carrots and farmer’s sausage separately.

  3. Add butter, milk, and water to potatoes. Add pre-cooked carrots, sausage, soup mix (dissolve in water first so it is not lumpy – add more water if needed). Bring to boil.

  4. This is very chunky soup and is a meal in itself.

BLT Chopped Salad

Ingredients

 2 heads romaine lettuce, chopped

 2 cups fresh arugula, chopped

 1 pint grape tomatoes, quartered

 6 slices Johnston’s Thick Sliced Bacon, fried crisp & crumbled

 1 cup frozen corn niblets, thawed

 1 avocado chopped

 1/2 cup feta crumbled

 1 1/2 Tbsp olive oil

 1 lime, juiced

 1/4 tsp salt

 1/4 tsp pepper

Instructions

1. In a large bowl, combine lettuce, arugula, tomatoes, corn and avocado

2. Add in salt, pepper, olive oil and lime juice then toss well to coat

3. Fold in bacon and feta then divide evenly among 2 plates

4. Serve & enjoy!

Dez’s Famous Sausage & Fennel Pasta

Servings: 6 portions

 Ingredients

Instructions

  1. Add olive oil, sausage, onion, garlic, fennel seed, salt and pepper to a large heavy bottomed pan.

  2. Turn the heat on to medium-high and cook, while breaking up the sausage, until the sausage is fully cooked and in small pieces, approximately 8 to 12 minutes.

  3. Stir in tomato paste, diced tomatoes, wine, vegetable paste, sugar, and sambal oelek. Bring to a boil and reduce over medium heat until the sauce becomes very thick, approximately 10 to 15 minutes. Cook your pasta in boiling, liberally salted water to desired consistency (approximately 13 to 15 minutes for penne) during this step.

  4. Once the sauce has reduced, stir in the whipping cream and then the cooked and drained pasta. Serve immediately garnished with parsley and grated Parmigiano Reggiano.

Chef’s Tip: ‘sambal oelek’ is a crushed chilli product that comes in liquid/paste form – it is optional in this recipe but I find that it really adds some complexity to the sauce, and with only one half teaspoon, the sauce is not spicy. If you want a spicy sauce, then add more sambal oelek or use hot Italian sausage instead of mild.

Ingredients

Instructions

  1. Preheat oven to 350°F.

  2. Cream together butter and sugars until smooth.

  3. Add egg and vanilla and blend in.

  4. Stir in flour, cornstarch, baking soda and salt.

  5. Stir in chocolate chunks and bacon.

  6. Drop by tablespoons onto a greased baking sheet and bake for 8-10 minutes, until golden brown around the edges.

Grilled Crispy Pork Belly with Turmeric Coconut Basmati Rice & Sauteed Baby Bok Choy

Grilled Crispy Pork Belly with Turmeric Coconut Basmati Rice & Sauteed Baby Bok Choy

Ingredients

Rub

Turmeric Coconut Basmati Rice

Sautéed Baby Bok Choy

Instructions

  1. Mix rub ingredients to form a paste.

  2. Place belly skin side down and cut 3/4 of the way through every 1 ½” to form a crisscross pattern. Rub paste into meaty side.

  3. On a bed of coarse kosher salt, lay belly skin side down for 5 hours.

  4. After 5 hours, score the skin side every ½” or so on an angle to form a diamond pattern.

  5. Preheat grill to 500°F.

  6. Rub skin with a generous amount of the kosher salt from the salt bed.

  7. Place belly on preheated grill over indirect heat, skin side up.

  8. Cook for approximately 1 ½ to 2 hours or until skin is puffy and golden brown.

  9. Slice into cubes and serve with rice and sautéed greens. Enjoy!

Turmeric Coconut Basmati Rice

  1. In a medium saucepan, heat oil over medium heat and add onion, garlic, ginger, and salt.

  2. Cook for 5-7 minutes stirring often until onions have softened, but not browned.

  3. Add rice and turmeric and stir for a few minutes.

  4. Add coconut milk and water and stir to combine.

  5. Raise heat to a boil and then reduce to low and cover.

  6. Cook for 15 to 20 minutes, or until liquid is absorbed.

  7. Remove from heat and fluff with fork and add chopped basil.

Sautéed Baby Bok Choy

  1. In a large skillet add 1 tablespoon or so of oil and heat over medium heat. Add onion, garlic and ginger, cook till softened.

  2. Add washed and trimmed bok choy leaves or chopped into 1 inch pieces. Sauté until stems become tender crisp.

  3. Add a few drops of sesame oil. Top with sesame seeds.

Asian Pork Dumplings

Servings: 48 dumplings

Ingredients

Instructions

  1. Hand mix in large bowl Johnston’s Ground Pork, garlic, ginger, bok choy, cilantro, green onion, eggs, soy, and pinch of salt and pepper.

  2. When mixed well, portion into ½ ounce and wrap in round wonton wrappers.

  3. Steam until done (approximately 4-6 minutes).

  4. Serve with soya sauce.
